The champagne method allows 15 months minimum bottle with capsule before proceeding to the dosage of the liquor, but we prefer to wait 3 years, because the longer we wait, the more fermentation gas in this closed environment dissolves in the wine. You will understand, aging on
slats allow a slower release of dissolved carbon dioxide, which explains in part the finesse of the bubbles without forgetting the know-how which allows the development of a creamy foam.
